Menu for Mary Nelson's b-day (59th or something?)

Crustoni with chevre and salsa-tapenade
Prosecco
Garden lettuce with Asian apple, gorgonzola and maple-candied pecans, balsamic dressing
Riesling
Vegetable Gateau (terrine lined with crepes filled with layers of carrot, mushroom and broccoli)
Salmon Cakes with lemon herb dipping sauce
Pinot Noir
Hazelnut Torte with Buttercream

James made the vegetable gateau. It was an incredible labour of love. I made the torte. The rest sort of fell into place. What I'm really trying to figure out is how to not end up with pounds of ground salmon and buttercream at the end of it all...
